Placed on a table in front of you are two pieces of cake. Cake A is from the bakery department of a big box supermarket. It is fit for purpose – reasonably moist and spongy. The cake is generic and a little bit bland – created for predictability and to suit all tastes whilst really satisfying no one. Cake B is from your local bakery. It is moist and delightful, made with local ingredients and slathered in hand whipped frosting. Cake B has all the little touches of a cake made with loving detail by a baker who wants every cake she makes to be a gastronomic experience.
